VICHYSSOISE - CREMA DE PUERROS FRÍA

Voy a dejaros aquí mi manera de hacer Vichyssoise. Hay múltiples recetas y, la verdad, las que he probado, toda buenísimas (con queso, con jamón, pan tostado, nata líquida...). 

Necesitas unos 4 puerros - un par de patatas medianas o una grande - una cebolla mediana - 3/4 de litro de caldo de pollo. Sal, aceite de oliva y pimienta negra.

Dos versiones:
La primera: reservas el caldo una vez listo (casero o comprado, tu decides. Aunque casero seguro es más saludable).
Mientras picas la cebolla y los puerros para dorarlos en una sartén con una gota de aceite. Cuando estén dorados, añades la patata pelada y a trozos. Remueves para que se dore también. 
Seguidamente, añades el caldo, remueves unos 5-10 minutos y lo puedes colar. Añade sal y pimienta a tu gusto.
Es una sopa fría aunque caliente está re-buena igualmente!

La segunda: sería trocear los alimentos y ponerlos a hervir en el caldo. Cuando estén blandos, utilizas el "turmix" para mezclarlo todo y luego lo puedes colar o bien comértelo tal cual. De todas formas vas a ingerir los nutrientes de los vegetales porqué te bebes el caldo, donde quedan los minerales y vitaminas hidrosolubles. 

Te animo a que las pruebes a ver cual te gusta más!






FRUTAS Y VERDURAS DE TEMPORADA OCTUBRE-NOVIEMBRE-DICIEMBRE

Además de las frutas y verduras que tenemos todo el año o de las que su temporada empezó antes de octubre y aún ahora se pueden encontrar y comer frescas (por ejemplo, verduras: ajo todo el año, calabaza y nabos a partir de abril-mayo hasta finales de año. Frutas: melón, aguacate y higos su temporada empieza en verano y finaliza octubre-noviembre, aunque aún puedas encontrar)... además de éstas, entre otras, ahora puedes añadir más!!

Fíjate, ahora empieza la temporada de la vitamina C. ¿Será porqué llega el frío y la naturaleza lo sabe? ¿Por qué digo esto? Seguro lo sabes. Durante años la vitamina C se ha usado como remedio popular ante los resfriados comunes, verdad?
Pues bien, he leído que no hay estudios dónde demuestren que los suplementos de vitamina C o los alimentos ricos en esta reduzcan el riesgo de resfriado común. Aún así si que hay indicios de que estas personas (las que toman regularmente vitamina C) pueden tener resfriados algo más cortos o síntomas algo más suaves. Aunque si a te funciona, en este caso ¿qué más da si hay o no estudios?
Además, si ahora las frutas y verduras de temporada resulta que son de las más ricas en vitamina C... será por algo, la naturales "sabe lo que hace". 

FRUTAS de esta temporada: las más ricas en vitamina C son mandarinas (frescas hasta finales de marzo-abril, aproximadamente), naranjas (abril-maig), kiwis (hasta marzo aprox), limones (mayo-junio), mango (temporada: agosto hasta noviembre, aproximadamente. Rico también en beta caroteno, el cual se convierte en Vitamina A - antioxidante). 
Además, tienes de temporada también: el Caqui (rico en beta carotenos también. Recuerda que beta carotenos són pigmentos rojos, amarillos y anaranjados así pues, fruta y verdura de este color, seguramente será más rica en estos. Aún así las frutas que destaco por su cantidad de vitamina C no son tan ricas en beta carotenos como el caqui, por ejemplo). La Chirimoia, Granada, Uva (cantidades normales de casi todas las vitaminas y minerales, hablando en general). La mayoría de estas frutas puedes encontrarlas todo el invierno, los cítricos hasta entrada la primavera. 

VERDURAS de esta temporada: las más ricas en vitamina C son acelga, brócoli, col lombarda, coliflor, repollo, espinacas y pimientos verdes y rojos. Recuerda los beta carotenos (pigmento rojo, anaranjado, amarillo: por lo tanto los pimientos rojos serán ricos en estos por ejemplo). Estas verduras son de temporada hasta junio aproximadamente, alguna antes (acelga, col lombarda, hasta abril mayo, es aproximado).
También son de temporada: alcachofas, berenjenas, puerros, escarola (esta última hasta febrero), guisantes (mayo). Su temporada finaliza también en verano aproximadamente. Añade aquí también el Cardo: de octubre-noviembre a enero-febrero. Es un buen diurético (sobretodo en infusión, por el agua que favorece el efecto) igualmente la Alcachofa, con la cual está emparentado - son de la misma familia (Asteráceas) .
La mayoría de estas verduras, así como las frutas anteriores, son de temporada hasta primavera.

Recuerda que toda fruta y verdura aporta vitaminas y minerales, en diferentes cantidades según fruta/verdura y según vitamina/mineral. Por eso, como siempre, la dieta variada es aplaudida. 

Y ahora me voy a comprar unos puerros de temporada para cocinarme una buena Vichyssoise!!

TARTIFLETTE

I was in France last week working in "the vendage"...  
What an incredible experience! I was in a domain where we worked and they gave us food every day... so imagine, it was homemade food every meal! Yummi!!

I could observe how french people eat... at least in this region where I was: Odenas, north Lyon (lovely views!). They use a lot of fromage, as I knew ;), butter, cream, mustard, mayonnaise and white wine. So a lot of dairy products as you can see and different kind of sauces too.
Even in the salads they used a vinaigrette made by mustard and/or mayonnaise (in ten days that I was there, I didn't eat salad dressed just by olive oil. What surprise me...).

I wanted to show you Tartiflette. It comes from Saboya, a french region next to Lyon (approx.). The recipe was created in 1980 and made public by the inter-trade union of reblochon. 
What is "reblochon"? 
It is the kind of cheese to cook Tartiflette. So you can observe that it's not a traditional recipe! 

So take a look: Tartiflette is made by reblochon cheese, cooked potatoes, bacon, cream, black pepper, sometimes they use some white wine (in my opinion, it tasted so well). And it goes directly to the oven to cook au gratin.

It is a delicious meal, really. I think that if you have a well balanced diet you can eat sometimes tartiflette. It's a greasy and caloric plate that's why I think you can eat it sometime, not every week.

Besides, you should know that cheese contains high protein value: more mature, more proteins contains. The reblochon cheese maturing is not as long as other types of cheese, it's just 6-8 weeks, but even cheese is considered a protein product. The protein present in it is casein. Proteins are made by amino acids. These are the part that our body uses and some of them are more useful than others (I explain it so simplify. More useful because our body cannot obtain if it's not through the diet). So casein is made by these kind of amino acids more useful. 
And, as I guess you know, cheese is rich in calcium too, as other dairy products.

In conclusion... I invite you to taste Tartiflette! 

I will cook it some day, to remember my days in the vendage and specially to remember the people I've met there, they made the experience great!!

BACON AND CABBAGE

Today is my last day in Ireland. It has been lovely to live here for a while. I like learning their history, their sayings, I love to chat with them, laugh, have chocolate after dinner, drink some tea and some guinness (for me a glass, please! I cannot finish a pint!). I had great time here, as everytime I come!

You will need plenty of time to cook it but you'll enjoy the most eating it!

1000 gr collar of bacon and 1 medium-sized cabbage.

Soak the bacon overnight in cold water. 
After that, remove and place in a pot. Then cover with fresh water and bring to the boil.
Remove the scum, cover and simmer for about 1 hour and a half (approximately: 30 minutes per 450 gr + 1 lb).
Cut the cabbage into quarters and add to the pot. 
Cook slowly for about 20 minutes. 
Finally, drain well and serve with boiled potatoes.

I discovered gravy sauce, you can mix it with the potatoes or over the bacon, it's so tasty! 

Bacon has saturated fat more than monounsaturated or polyunsaturated fat. As you know, it is the fat that increases LDL cholesterol  in our bodies, as a consequence it can narrow our arteries. So don't abuse, don't eat too much (that means it's not necessary that you eat everyday :) twice a week it's enough if you have healthy habits).

It is also rich in sodium so be careful if you have blood pressure problems! I'll try to write a post about it.

Cabbage, as a vegetable, is rich in vitamins and minerals generally.  And potatoes are rich in carbohydrate. Carbohydrates are good to give you energy for a long time, good energy source.

IRELAND SWEET IRELAND

I'm in Ireland again... this time I'm near Dublin. I totally forget how I love this country!!


I've met a lovely family, I could not stay better! I've learnt more about Ireland, about their history, about their saying (I'm sound as a pound!!), about their habits, people, dance... and of course about their food!

Do you know an Irish typical meal?? BACON AND CABBAGE. 
So I'll write the recipe for you in my next post. No time now... prepare your stomachs to this yummy meal!!

GAZPACHO SOUP - SUMMER BEST CHOICE!

Just vegetables, vinegar and olive oil... so what do you think??? Healthy or not???

Eating GAZPACHO SOUP you will ingest all kind of vitamins (tomato is the main ingredient and it is rich in A vitamin, above all. In general you can say it for all red vegetables), minerals, water (perfect to hydrate your body) and olive oil properties (as you know: basically, E vitamin - antioxidant - and monounsaturated fatty acid - it causes LDL cholesterol goes down and HDL cholesterol increases, besides it dilates our vessels what means it reduces our blood pressure. Remember: as always "eat everything but moderately").

Try it! Easy to cook and healthy:

- 1 Kilo tomatoes 
- 1/2 small onion (60 grams)
- 1 small green pepper
- 1 small cucumber
- 1 small cup of olive oil
- 2 desert spoons of vinegar
- 200 grams of bread from the day before, soaked in water
- Small portions of diced tomatoes, red and green peppers, cucumber, onion and bread or croutons to sprinkle on top.

Put the tomatoes, onion, pepper, cucumber, vinager, oil and bread into a liquidizer. If you want to dilute it, add a glass of water. If you want to go for a tangy garlic taste, add a small amount of fresh garlic to the mixture before liquidizing.

Put the mixture into a bowl, add salt and pepper and leave the gazpacho to chill for at least an hour. If you want to eat it straight away, you can put some ice cubes in to cool it down. Gazpacho is a Summer dish... the colder the better.

Serve the gazpacho en soup bowls, with the portions of diced tomatoes, pepper, cucumber, onion, croutons etc on the table, so that everyone can add them to their bowl as they prefer. You can also sprinkle diced serrano ham or hard boiled egg. You can fry serrano ham before to mix with gazpacho.

FRUITES TEMPORADA ESTIU - SUMMER FRUITS - FRUTAS PARA EL VERANO

Ja pots afegir a la teva dieta noves fruites de temporada:

SÍNDRIA I MELÓ, les "estrelles" de l'estiu, destaquen pel seu alt contingut en aigua: imprescindible per mantenir una bona hidratació, i més en mesos de calor! 
Afegeix a la teva llista: les CIRERES i les PRUNES.

De les anteriors, et recomano especialment la síndria pel què fa a la relació quantitat d'aigua/sucres: és de les que més aigua t'aporta i la quantitat de sucres és més baixa que les altres. El meló, en canvi, és força ric en sucres (en comparació), igualment les cireres. 

A més a més, tens, de temporada, l'ALVOCAT. Aquesta fruita destaca per la qualitat dels seus greixos i la relació d'aquests i els saturats. 
L'alvocat t'aporta àcids grassos monoinsaturats (el principal representant d'aquests és l'oli d'oliva) els quals afavoreixen l'augment del colesterol HDL o el que coneixem com a "colesterol bo".

I recorda que les fruites sempre t'aporten en més o menys quantitat vitamines i minerals.




You can add to your diet  WATERMELON and MELON, they are our summer "stars". Why??
Because they are rich in water what is perfect to hydrate/moisturise your body. Can you see? Wise nature: summer = hot, we need more water because we loose more so nature "gives" us fruit rich in it!
You can also add: CHERRIES and PLUM. 

I recommend you the most: watermelon, because it contains high percentage of water and not to much sugar. On the contrary, melon has more quantity of sugar than watermelon, and also cherries has (you can eat them, of course! It's just information for you to combine food to eat healthy and well-adjusted).

And another one: AVOCADO. It provides you: Monounsaturated Fat (olive oil is the representative of this group), which assists HDL cholesterol increase (in catalan and spanish we call it "the good cholesterol").

Remember that fruit always supplies you with vitamins and minerals.




Ya puedes añadir las nuevas frutas de temporada en tu dieta:
SANDÍA y MELÓN - las "estrellas" del verano, destacan por su alto contenido en agua: imprescindible para mantener una buena hidratación y más en meses calurosos!
Añade también en tu lista: CEREZAS y CIRUELAS.

De todas estas, te recomiendo especialmente la sandía porqué la relación agua/azúcares que contiene es realmente buena: es de las que más agua te aporta y menos azúcares. 
El melón, en cambio, es más rico en éstos últimos, en comparación, e igualmente las cerezas. Además te aportan menos agua.

Otra fruta de temporada: AGUACATE. Este destaca por su calidad de ácidos grasos o grasa así como la relación de estos y los saturados. 
El aguacate te aporta ácidos grasos monoinsaturados (el aceite de oliva es el principal representante de éste grupo), los cuales favorecen el aumento del colesterol HDL, conocido también como "colesterol bueno". 

Recuerda que la fruta siempre te aporta más o menos cantidad de vitaminas y minerales.
