I will start the "Recipe's Idea"! And I will start sharing an Irish one... I choose a special one... why?
Well, the story starts at my place... I had a great lunch today, not only because of the meal. I had lunch with my flatmates, Assia and Serge, and two friends of mine: Adrià and Biaix.
Adrià, Biaix and I were working together in Ireland, we've met there. It was a lovely July! We didn't see each other for a long time so we decided to meet today. To remember our time in Gaelic country, we cooked some Irish food. So, I will share the recipe...
STUFFED WHITE FISH WRAPPED IN BACON...
Serves 4.
4 good-size or 8 small fish fillets.
4 fatty bacon rashers
boiled new potatoes and green beans or broccoli, to serve (we used broccoli... yummy!)
For the stuffing:
50 gr /2 oz / 1/4 cup butter
1 onion, finely chopped
50 gr / 2 oz fine fresh brown breadcrumbs (well... we used white bread... sorry Irish people ;)
5 ml / 1 tsp finely chopped fresh parsley
a good pinch of mixed dried herbs
sea salt and ground black pepper.
1. Preheat the oven to 190ºC / 375ºF / Gas 5. trim the fish fillets. If they are fairly big, cut them in half lengthways; leave small ones whole. Remove the rind and any gristle from the streaky bacon rashes.
2. To make the stuffing, melt the butter in a small pan, add the onion and cook gently until softened but not browned. Add the breadcrumbs, parsley and herbs. Season to taste.
3. Divide the stuffing between the fillets, roll them up and wrap a bacon rasher around each one.
4. Secure the stuffed fish and bacon rolls firmly with wooden cocktail sticks (toothpicks) and lay them in a single layer in the base of a shallow buttered baking dish. Cover the dish with foil and bake in the preheated oven for 15 minutes, removing the cover for the last 5 minutes to allow the bacon to brown.
5. Serve the fish rolls immediately with boiled new potattoes and green beans or broccoli.
And... you can eat it!
We cooked our version: we didn't roll them, we used white bread, the onion was brown ;) and, of course, we ate at "Spanish time" ;);)
